How do we describe the 'art' of bread making? It isn't as easy as throwing some ingredients together and poof you have a loaf of artisan bread. The art of baking bread is the understanding of combining starters, poolishes, levains and the timing, temperature, and ingredients needed to make that perfect loaf.
When to add steam. How much steam. At what temperature.
All of this needs to have someone with a passion for doing that one thing. Everyday. Day after day and constantly trying to improve on perfection.
